I am confused. Your instructions keep referring to iTunes, iTunes was discontinued a couple years ago and has been replaced by Apple music. Please explain. Thank you

Hello,
This is for an Apple Music / Bose SoundTouch app issue through my MacBook Pro.
If I convert my Apple Music library using “Audio Converter” (originally on iTunes) to MP3, does it affect my music folders, specifically my playlists, and do I still have the capability to use them on my earlier Apple devices such as iPods?
Basically, doe the operating face and functionality of my library still look the same.
Also, when I add to my library, is this done automatically?
